Skillet Chourico Nachos

INGREDIENTS:
½ package Mello’s Finest Ground Chourico
Tortilla chips, homemade or store bought
1 15oz can pinto beans, drained and rinsed
1 cup mozzarella cheese, shredded
1 jalapeño pepper, sliced
Slices of red onion
Green onion, diced
Fresh cilantro, chopped
Queso fresco
INSTRUCTIONS:
Preheat oven to 350°F.
In a small saucepan, heat a little olive oil then add ground chourico. Heat through and add any additional spices, if desired (extra paprika, cumin, or seasoned salt).
Add chips to a skillet (alternatively can use a baking sheet). Top with cheese, beans, chourico, red onion, and jalapeños.
Bake for 10 minutes, then remove from oven.
Add green onion, cilantro, and sprinkle with queso fresco. Serve warm.
