Pinto Beans with Chourico
INGREDIENTS:
2 Cups cooked pinto beans or 2 14oz. can of beans
5-7 cloves minced garlic
1 Medium red onion diced
Half Tablespoon cumin
Salt
Pepper
1 chopped chili peppers (or any hot pepper)
Fresh salsa
1/2 cup minced fresh cilantro
7oz diced tomatoes (half can)
1 stick (1/2 lb) Hot Chourico
INSTRUCTIONS:
Sauté onion, garlic, and chourico until tender. Add 3 Tablespoons of salsa, chili peppers, cumin and cook for an additional minute.
Add beans and can of tomatoes. Cook on med/low heat. Add salt and pepper. Add cilantro and cook until wilted.
Serve with salsa over rice.
