Chourico Shakshouka

INGREDIENTS
½ lb Mello’s Ground Chourico
2½ cups marinara sauce
4 eggs
1 tsp salt
1 tsp paprika
Cilantro, chopped
Crumbly cheese such as feta, queso fresco, or cotija
Tortilla chips, for serving
INSTRUCTIONS
Preheat oven to 350°F.
In a small sauce pan over medium heat, add oil and ground chourico. Cook thoroughly then set aside.
In a small skillet (8-9”), pour in marinara sauce and heat on the stove over medium heat until bubbly. Add salt and paprika and stir.
Crack eggs one at a time inside the sauce. Continue to cook until whites of the eggs begin to set.
Add skillet to oven and allow to cook 8 minutes at 350°F then the next 2-3 minutes broiling on low to allow the egg yolks to cook through.
Once the eggs are cooked, remove skillet and top with ground chourico, cilantro, and cheese. Serve with chips.
