Chourico Breakfast Hash

INGREDIENTS:

  • 4-5 white potatoes, peeled and cubed

  • 1 tsp salt

  • 1 tsp pepper

  • 1 link Mello’s Chourico, sliced

  • 2 eggs

  • Fresh cilantro

INSTRUCTIONS:

  1. In a large skillet, add olive oil over low heat.

  2. Crack eggs away from each other and allow to fry, making sure the whites are cooked through (leaving the egg yolks a little runny if desired). Remove from pan and set aside.

  3. In a skillet, heat oil, then add potatoes. Cook until soft and toss in salt and pepper.

  4. Halfway through cooking, add chourico slices.

  5. Top with fried egg, and garnish with cilantro.
