Chourico Breakfast Hash
Recipe created for Mello's Chourico by Rosie Hatch (Instagram)
INGREDIENTS:
4-5 white potatoes, peeled and cubed
1 tsp salt
1 tsp pepper
1 link Mello’s Chourico, sliced
2 eggs
Fresh cilantro
INSTRUCTIONS:
In a large skillet, add olive oil over low heat.
Crack eggs away from each other and allow to fry, making sure the whites are cooked through (leaving the egg yolks a little runny if desired). Remove from pan and set aside.
In a skillet, heat oil, then add potatoes. Cook until soft and toss in salt and pepper.
Halfway through cooking, add chourico slices.
Top with fried egg, and garnish with cilantro.
