Pinto Beans with Chourico

INGREDIENTS:

  • 2 Cups cooked pinto beans or 2 14oz. can of beans

  • 5-7 cloves minced garlic

  • 1 Medium red onion diced

  • Half Tablespoon cumin

  • Salt

  • Pepper

  • 1 chopped chili peppers (or any hot pepper)

  • Fresh salsa

  • 1/2 cup minced fresh cilantro

  • 7oz diced tomatoes (half can)

  • 1 stick (1/2 lb) Hot Chourico

INSTRUCTIONS:

  1. Sauté onion, garlic, and chourico until tender. Add 3 Tablespoons of salsa, chili peppers, cumin and cook for an additional minute.

  2. Add beans and can of tomatoes. Cook on med/low heat. Add salt and pepper. Add cilantro and cook until wilted.

  3. Serve with salsa over rice.
